Ratatouille, a famous French specialty of vegetables, is perfectly combined with hummus, and you can serve it as a warm or cold appetizer, or as a main course. You can prepare it the day before, because after staying in the fridge, it becomes even more delicious.
• 250g of Ribella Hummus with shiitake mushrooms
• 1 zucchini
• half eggplant
• 1 red pepper
• 1 tomato
• half broccoli head
• French bread
• 200g of Greek yogurt
• olive oil, onion, spices
Cut zucchini, eggplant, peppers, tomatoes and broccoli into cubes and fry them on pre-heated olive oil. Add finely chopped black and white onions and spices (pepper, fresh oregano, rosemary, salt). Toast some French bread and put on it Ribella Hummus and add ratatouille (grilled vegetables). Pour some Greek yogurt on it.
