Ratatouille Sandwich with Ribella Hummus

Ratatouille, a famous French specialty of vegetables, is perfectly combined with hummus, and you can serve it as a warm or cold appetizer, or as a main course. You can prepare it the day before, because after staying in the fridge, it becomes even more delicious.

Ingredients:

• 250g of Ribella Hummus with shiitake mushrooms
• 1 zucchini
• half eggplant
• 1 red pepper
• 1 tomato
• half broccoli head
• French bread
• 200g of Greek yogurt
• olive oil, onion, spices

Preparation:

Cut zucchini, eggplant, peppers, tomatoes and broccoli into cubes and fry them on pre-heated olive oil. Add finely chopped black and white onions and spices (pepper, fresh oregano, rosemary, salt).
