CHINESE SPRING ROLLS WITH HUMMUS
Ingredients:
–          ½ small red cabbage
–Â Â Â Â Â Â Â Â Â Â 2-3 large carrots
–          ½ lemon juice
–Â Â Â Â Â Â Â Â Â Â about 15 rice paper leaves
–Â Â Â Â Â Â Â Â Â Â 30 g sesame
–Â Â Â Â Â Â Â Â Â Â 2 tablespoons of soy sauce
–Â Â Â Â Â Â Â Â Â Â 1 teaspoon of brown sugar
–Â Â Â Â Â Â Â Â Â Â 1 teaspoon of rice vinegar
–          200 g Ribella hummus of one’s choice
Instructions:
Cut the cabbage into strips. Peel and shred the carrots and add them to the cabbage. Stir the vegetables well to distribute them evenly. Add the lemon juice and stir again.
Soak each rice-paper leaf briefly in water and place it on the work surface. In this way, the paper will soften. Spread a teaspoon of hummus onto the middle of the rice paper. Put a little of the vegetables over the hummus, also in the middle of the paper, and sprinkle with sesame. If the leaf has not softened yet, wait for a while and then roll the leaf around the vegetables into a roll.
Continue with the other rice paper leaves and vegetables.
For the sauce, mix the soy sauce, brown sugar and rice vinegar. Serve the rolls with the sauce.
