PIZZA WITH RIBELLA HUMMUS
Ingredients:
Dough:
– 200 g bread flour
– 120 ml water
– 5 g salt (a half of a teaspoon)
– ½ teaspoon of sugar
– 1 tablespoon of olive oil
– ½ teaspoon of dry yeast
Filling:
– 200 g hummus, Italiano or Spicy flavour
– 200 g shredded mozzarella or other meltable cheese
– 1-2 tomatoes
– 7-8 olives
– Oregano
– A few dried tomatoes, as desired
– Basil leaves, for serving
Making:
Knead the pizza dough first. Measure the warm water and add the dry yeast and sugar, stir and leave to rest for about ten minutes for the yeast to activate. Add the flour, salt and olive oil to the risen yeast and knead to an elastic-like dough. The dough should be kneaded for about 5 minutes. Cover the dough with a wet cloth and leave it to rise. Knead the risen dough again, and if you have enough time, leave it to rest in the fridge for a few hours. If you do not have time, you can continue preparing immediately.
Roll out the dough in the form of a circle, around 5 mm thick, and then transfer it onto a baking tray lined with parchment paper. Turn on the oven to heat to 220 °C. Spread a thin layer of hummus on the rolled dough. Put the cheese over the hummus, then lay tomato slices, olives, pieces of dried tomato and finally sprinkle with oregano.
Bake the pizza in the heated oven for about 10 minutes. Before the end, check whether the bottom of the dough has gained colour. If it has, the pizza is ready.
