A combination of vegetables, tofu and hummus packed as wraps is an excellent meal option, but also a snack, which can be prepared quickly in case of a company. Try it and tell us if you like it. 😀

HUMMUS AND GRILLED TOFU WRAPS

Ingredients:

–           4 tortillas

–           200 g Ribella hummus

–           200 g tofu cheese

–           1 middle-sized green zucchini

–           lettuce

–           tomatoes

–           red onion

–           3-4 tablespoons of olive oil

–           1 tablespoon of freshly squeezed lemon juice

–           seasoning to taste

Preparation

Mix well olive oil, salt and lemon juice in a small container. Cut zucchini and tofu into slices and place in separate containers. Spread with previously prepared dressing and mix lightly. Let the mixture marinate for 10 to 15 minutes.

Fry zucchini and tofu in a grill pan, for 2 to 3 minutes on each side.

Place the tortilla on a plate. Over half a tortilla spread Ribella Hummus. On top of hummus place lettuce, sliced tomato, red onion, grilled zucchini and tofu. Fold over the empty side of the tortilla, then fold the sides toward the centre. If necessary, wraps can be tied with a piece of string.

Repeat the process with other tortillas and serve immediately.
