HUMMUS WITH ROASTED CAULIFLOWER AND CRISPY CHICKPEAS
You will need the following ingredients:
– 1 small cauliflower (500–600 g)
– 100 ml of olive oil
– 400 g of cooked chickpeas
– 1 teaspoon of salt
– 1 teaspoon of sweet paprika
– 400 g of Ribella hummus of your choice,
Preparation:
Heat the oven to 200°C and line two large baking trays with baking paper.
Cut and break the cauliflower into florets. Put them into a bowl and then sprinkle them with ½ teaspoon of salt and 50 ml of olive oil. Mix well so that the oil is evenly coated over the cauliflower, and then arrange the cauliflower florets in one of the prepared trays. Bake for 20 minutes in a preheated oven until the cauliflower changes its colour a little and until it softens.
Drain the chickpeas from the jar and rinse them well. Add ½ teaspoon of salt, sweet paprika and 50 ml of olive oil. Mix well and then move to another tray. Bake the chickpeas for approximately 20 minutes until they become crispy.
Spread Ribella hummus on the plate. Spread the roasted cauliflower and chickpeas on top of the hummus. Sprinkle with some olive oil, decorate with parsley leaves and serve with a bun… And then, dig in! 🙂
There – we promised that it would be simple and easy… Talk about the taste – we cannot convey it through the text, so you will have to make an effort and make sure that this way of preparing the cauliflower is awesome. 🙂
Enjoy your meal…. And you will hear from us with new recipes soon.
