The whole world loves them because they’re practical, tasty, fast to prepare and can be made with whatever you want.
But before we get to the most important thing, we have to mention corn first. Corn is one of the most famous and widespread cereals in the world, domesticated in Mexico some 9,000 years ago.
The first “tortillas” or “buns” made of ground corn, lime and water were actually the true basis for tacos. Before the arrival of Europeans, tacos were mainly made of vegetables and the meat of certain animals that are rarely found on today’s menus. 😀
These days there are so many types and ways of making tacos that we couldn’t list them all, but suffice to say that tacos are one of the most famous dishes in Mexican cuisine, and one that’s now conquered the world.
We’re sure you know that tacos can be made with meat, seafood or vegetables.
Our choice for the recipe today is one that highlights the flavour, simplicity and irresistible appeal of tacos. 😀
TACOS WITH HUMMUS, MUSHROOMS AND CABBAGE
Ingredients:
– a dozen empty tacos or small wholemeal flour tortillas
– ¼ of a small red cabbage
– fresh juice of ½ a lemon
– a few stalks of celery
– 2 tablespoons of olive oil
– 300 g of mushrooms or oyster mushrooms
– about 200 g of feta cheese
– salt and black pepper to taste
– 200 g of Ribella hummus shiitake or hummus of your choice
Preparation:
First prepare the cabbage. Cut it into strips and put into a large bowl. Add finely chopped celery stalks, the juice of ½ a lemon, salt and pepper. Mix well with clean hands and mash the cabbage a little. In this way, the ingredients will get evenly mixed, and the cabbage will become a softer. Now let the cabbage salad sit and rest.
Cut the mushrooms into slices. Pour olive oil into a dry, deep frying pan and heat it. Add the mushrooms, salt and black pepper, and simmer and stir for about 10 minutes until the excess liquid evaporates. Remove from the stove and leave to cool a little.
Spread ½ tablespoon of hummus on every tacos or small tortilla (if you don’t have small tortillas, cut out circles with a diameter of 15 cm from large tortillas). Put a tablespoon of the fried mushrooms over the hummus, and then a little cabbage salad. If you like, you can add some shredded feta cheese. Do the same with the rest of the tacos or tortillas, until all the ingredients have been used. Serve immediately!
